Aligot potatoes recipe. In a large pot over medium high heat add the potatoes garlic and cover with cold water. Boil for 20 25 minutes until tender in the centre when tested with a skewer. Set the pot over low heat and stir in the garlic butter cream and about half of the cheese.
Thinly pare and discard the skins of the potatoes. Bring to a boil reduce the heat to medium low and simmer until the potatoes are fork tender about 20 minutes. Immediately pass the potatoes through a food mill or ricer and return them to the pot.
Add a big pinch of salt.
