Fondant Chocolate Chip Cookies

I like to use small embossing sticks or veining tools to make pretty details in the rolled fondant. Cook but do not stir until fondant reaches soft ball stage 225 degrees.
225g good quality dark chocolate about 70 cocoa 4 tablesoons of butter. In a large bowl cream together butter and sugars until light and fluffy. 1 4 cup sifted cocoa powder for a darker cookie my photos show one with cocoa and one without.
