Prawn And Chorizo Risotto

Prawn and chorizo risotto. Add the chorizo to the risotto and stir. It s up there with one of my favourite meals like a lot of meals and it always feels like such a treat as i see it as a fancy dinner like a friday or saturday night dinner. Once all the stock has been used the process will take about 25 minutes add the prawns and peas.
Preheat the oven to 200c gas mark 6. When the prawns are pink add the butter half the parmesan cheese and half the chorizo pieces. Tip the oil onion peppers chorizo garlic and chilli into an ovenproof dish then bake for 15 mins at 200c 180c fan gas 6.
Heat a tablespoon of oil in a large frying or wok and add the onions celery and red pepper. Season with salt and pepper mixing well together. Return to the oven for 20 minutes.
Add onion and garlic and saute over gentle heat for 3 4 minutes. Prawn and chorizo risotto i can t believe this isn t already on my blog. When the wine has been absorbed add the tomatoes and cook stirring for 2 minutes.
Add rice and cook for a further minute. Increase heat add wine and allow it to bubble up. 200 g chorizo sliced and halved 1 tsp chilli flakes 275 g risotto rice 1 medium glass of white wine 1 l chicken stock 1 pinch saffron infused in a 1 tbsp of warm water 200 g raw king prawns black pepper freshly ground 1 small handful fresh coriander finely chopped 1 knob of butter.
Let it bubble for a minute before adding the stock one ladle at a time stirring continually. Heat oil in a large deep frypan with a lid. Stir for minute before adding the risotto rice.
