Salade Quinoa Feta

Small pack flat leaf parsley roughly chopped.
Salade quinoa feta. Zest and juice 1 lemon. Step 2 stir feta cheese cucumber tomato lemon juice vinegar olive oil dill weed salt and black pepper into quinoa. Reduce heat to medium low cover and simmer until quinoa is tender and water has been absorbed 15 to 20 minutes.
Mix the tomatoes arugula and feta cheese into the quinoa. Mix in the garlic powder onion flakes paprika salt and pepper. Peppers red yellow or mixture deseeded and cut into chunky long wedges200g baby courgette halved lengthways.
Shake vigorously for 30 seconds to emulsify. Refrigerate quinoa in a large bowl until cool about 30 minutes. In a small mason jar combine the olive oil lemon juice garlic dijon mustard salt and pepper.
