Risotto Courgette

Reduce the heat and stir in the garlic and chilli and cook for another 2mins.
Risotto courgette. Stir in the courgettes and turn up the heat. Wipe out the pan. Pour in 150ml pint of the stock stir and simmer for 5 mins.

Add the stock cube and bring to the boil over a high heat stirring to dissolve then turn the heat down to low. Next add the arborio rice this needs to be toasted in the pan with the onions. Trim the courgettes slice lengthways into quarters then chop into small cm chunks and put to one side.
Fry the courgettes with some seasoning on both sides until lightly golden. Add the risotto rice. Melt the butter in a sturdy frying pan add the onion and gently fry until softened.
