Chicken And Chorizo Risotto
 
										Turn the heat down and add the garlic.
Chicken and chorizo risotto. Heat oil in pan and add in onions and garlic and some more chopped rosemary. Add the stock a little at a time make sure to stir continuously. Step 2 into the same pan add red bell pepper 1 and spanish chorizo 1 and cook for a few minutes or until the chorizo is nicely brown.
Add in chicken pieces and chopped chorizo. Heat oven to 180 degrees. When the chicken is done remove and set aside.
Gradually add the rice. Add the risotto rice and continue to cook for another 10 minutes. Fry for 1 minute stirring regularly.
Fry for 2 minutes stirring regularly. 1 chorizo chopped 1 red pepper finely sliced 1 yellow pepper finely sliced 2 chicken breasts chopped 2 onions finely chopped 3 cups of basmati rice enough for 4 people 1 and quarter pints vegetable or chicken stock glug of white wine optional tin of sweetcorn handful of frozen peas generous shaving of parmesan cheese knob of butter. Pour in the wine stir until it s absorbed by the rice.
Place your chicken carcass back in the water and add chopped onions carrots celery and a handful of black peppercorns. Put tomatoes in a dish with oil balsamic vinegar s p and a few sprigs of rosemary. Simmer until chicken cooked through and juices run from chorizo.
Turn up the heat a little and add the chorizo and chicken. In a large sauce pan over high heat add olive oil 3 tbsp and cook boneless skinless chicken thighs 6 for 6 minutes until nicely brown.
